ZUCCHINI BREAD 
2 1/2 c. shredded zucchini
3 eggs
1 c. salad oil
1 1/2 c. sugar
1 tsp. vanilla
3 c. flour
2 tsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
1/2 c. nuts
1/2 c. raisins or chopped dates

Mix the first 5 ingredients and blend well. Sift dry ingredients and add to the first five. Add nuts and raisins; mix well for 1 minute. Grease and flour small loaf pan. Do not use a bread pan (bread does not get done in the middle). Bake at 350 degrees for 60 minutes.
