BRAZILIAN RICE 
2 c. rice
1/2 c. chopped onion
1/2 minced clove garlic
2 tbsp. olive oil
2 chopped fresh tomatoes

Place the onion and garlic in the olive oil and saute until soft and light brown. Add the rice and chopped tomatoes along with 4 cups water. Bring to a boil, stir, turn to low heat and cook for 20 minutes.
