APPLE-DATE NUT CAKE | |
1 3/4 c. unsifted all-purpose flour 2 tsp. unsweetened cocoa powder 1 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. ground cloves 1/2 c. (1 stick) butter, softened 1 c. sugar 2 eggs 4 c. chopped, pared tart apples (2-3 lg. apples) 1 c. chopped walnuts or pecans 1/2 c. chopped pitted dates 1/2 c. cold coffee Old-Fashioned Caramel Frosting 1. Preheat oven to moderate, 350 degrees. Grease 6 1/2 cup tube pan. Dust with flour; tap out excess. 2. Combine 1 1/2 cups of the flour, cocoa powder, baking soda, cinnamon and cloves in small bowl; set aside. 3. Beat together butter and sugar in large bowl until smooth and creamy. Beat in eggs, one at a time, until well blended. 4. Combine apples, nuts and dates in medium size bowl. Add remaining 1/4 cup flour; toss together until all nut and fruit pieces are well coated with flour. 5. Add flour mixture alternately with coffee to butter mixture, beginning and ending with the flour, until batter is smooth. Stir in apple mixture. Spoon into prepared pan. 6. Bake in preheated moderate oven, 350 degrees, for 55 to 60 minutes. |
