APPLE DAPPLE CAKE 
3 eggs
2 c. sugar
1 c. vegetable oil
1 tsp. vanilla
3 c. sifted flour
1 tsp. cinnamon
1 tsp. baking soda
Pinch of salt
3 c. chopped apples
1/2 c. chopped nuts

Combine eggs, sugar, oil, and vanilla and beat together. Mix dry ingredients and add to mixture. Add apples and nuts last. Top with cinnamon/sugar and a sprinkle of nuts. Bake in a greased and floured tube pan for 1 hour at 350 degrees.
