NEVER FAIL MERINGUE, MERINGUE
WITHOUT MISERY, SUPER MERINGUE
 
1 tbsp. cornstarch
3 egg whites
Pinch of salt
2 tbsp. cold water
6 tbsp. sugar
1 tsp. vanilla
1/2 c. boiling water

Dissolve cornstarch in cold water. Stir into boiling water and cook, stirring until mixture boils and thickens. Cool completely. Beat egg whites until fluffy on high speed. Gradually add sugar, salt and vanilla while continuing to beat until mixture is thick and glossy. Turn mixture to medium and add cornstarch mixture gradually while continuing to beat. When smooth, spread on pie filling, anchoring meringue to rim of pie. Bake at 350 degrees for 20 minutes or until evenly browned. Cook slowly away from drafts.
