NEVER FAIL MERINGUE 
1 tbsp. cornstarch
1 tbsp. cold water
1/2 c. boiling water
2 or 3 egg whites
Pinch of salt
4 to 6 tbsp. sugar (depending on the number of egg whites used)

Moisten cornstarch with cold water. Add boiling water and cook in a small saucepan until thick and clear. Set aside to cool. Whip egg white until stiff. Add a pinch of salt to egg white before beating. Add sugar 1 tablespoon at a time, then add cooled cornstarch mixture. Beat until the right consistency to spread. Spread on pie filling and brown in a 375 degree oven for 15 minutes. Let cool out of draft.
