BROCCOLI SALAD | |
2 c. broccoli flowerettes, cut VERY sm., not bigger than thumb nail 2/3 c. seedless red grapes, halved 1/2 sm. red onion, chopped very fine or 4 green onions, sliced 1/3 c. raisins, black or white 3 pieces bacon, fried, drained, blotted & crumbled 1/3 c. peanuts or slivered almonds or sunflower seeds, toasted & salted (I used these as topping, but could be mixed in) DRESSING: 1/2 c. Hellmann's lite or Miracle Whip light or mayo 1 tbsp. cider vinegar 1/8 c. sugar 3 squirts lemon juice (or just less sugar) How To: Mix dressing and let set. Mix all of the salad ingredients except nuts/seeds. Fold dressing in and mix gently until all is covered. Refrigerate one or two hours or overnight. Add nuts/seeds at serving time. Serves two for main course, four for side course or buffet. |
