APRICOT BRIE 
1 sm. Brie cheese wheel (round) or 1 wedge Brie cheese
1 Pepperidge Farms puff pastry sheet, defrosted, then unfolded
5 tbsp. apricot jam or preserves

Preheat oven to 325 degrees. Grease small cookie sheet. Spoon 5 tablespoons jam onto unfolded square pastry sheet center. Place Brie wheel or wedge over jam. Carefully bring sides and ends up and overlap, pressing gently. Turn over and onto small cookie sheet so folds are on bottom. Brush with melted butter. Bake on top oven rack for approximately 20 minutes. Pastry could be lightly golden. Surround with crackers and or thin French baguette slices. Use pate knives for spreading.
