NORWEGIAN SAND BAKKELS 
1 c. butter
1 c. sugar
2 1/2 c. flour
Yolks of 2 eggs or 1 whole egg
1/2 tsp. almond extract

Cream butter until soft, beat in sugar. Then add egg and beat until creamy. Gradually work in flour and work dough until well mixed. Take a small piece of dough and press into fluted Sand Pakkel pans, spreading dough as thin as possible. Bake in a moderate oven (350 degrees) about 15 minutes. Cool and remove from tins being careful not to break as they are very fragile. This makes about 60.
