CHOCOLATE PEPPERMINT SQUARES 
COOKIE BASE:

4 eggs
1 c. cocoa powder
1/2 tsp. peppermint extract
2 sticks melted butter
2 c. sugar
1 c. flour
1 tsp. vanilla

Beat eggs and sugar together until thick. Add remaining ingredients in order given. Spread in regular size greased cookie sheet. Bake 15 minutes at 350 degrees, do not overbake. Cool before frosting.

FROSTING:

2 3/4 c. confectioners' sugar
1/2 tsp. peppermint extract
3-5 drops green food coloring
1 stick melted butter
Milk

Mix all ingredients together, adding sufficient milk to make frosting spreading consistency. Frost cookie portion.

GLAZE:

2 (1 oz.) sq. unsweetened chocolate
2 tbsp. butter

Melt chocolate and butter together. Paint frosted cookie using pastry brush. Cool before cutting.

Makes 3-4 dozen.
