2 eggs 1 c. granulated sugar 1 c. sifted all-purpose flour 3/4 c. butter, melted and cooled 1 tsp. grated lemon peel Confectioners' sugar Preheat oven to 350 degrees. Grease and lightly flour three Madeline pans. In top of double boiler, over hot, not boiling water (water in bottom of double boiler should not touch base of pan above) with electric mixer at medium speed, beat eggs and granulated sugar while mixture heats to lukewarm, takes about 2 minutes. Set top of double boiler in cold water. Beat egg mixture at high speed, 5 minutes, or until very light and fluffy. With wire whisk or rubber scraper, gently fold in flour until well combined. Stir in cooled butter and lemon peel just until blended. Pour into prepared pans, using 1 tablespoon batter for each cookie. Bake 12 to 15 minutes, or until golden. Cool 1 minute, then remove from pans with a small spatula. Cool completely on wire racks. Then sprinkle with confectioners' sugar. Makes 3 dozen. |
