2 eggs 1/8 tsp. salt 1/2 c. sugar 1/2 c. all purpose flour 1 tsp. grated lemon rind 1/2 c. butter, melted & cooled Powdered sugar Beat eggs and salt at high speed of an electric mixer until foamy. Gradually add sugar; beat at high speed 15 minutes or until thick. Combine flour and lemon rind; fold in 2 tablespoons at a time. Fold in butter, 1 tablespoon at a time. Spoon 1 tablespoon batter into greased and floured madeline molds. Bake at 400 degrees for 8 to 10 minutes or until lightly browned. Cool in molds about 3 minutes. Remove from molds and cool on a wire rack, flat side down. Sprinkle with powdered sugar. Yield: 2 dozen. |
