MINI CHERRY CHEESECAKE 
Vanilla wafers
3/4 c. sugar
2 (8 oz.) pkgs. cream cheese, softened
2 eggs
1 tbsp. lemon juice
1/2 tsp. vanilla
1 can cherry pie filling

Place cupcake liners in muffin pan with 1 wafer to each liner. Cream sugar and cream cheese. Add eggs. Blend in lemon juice and then vanilla. Pour over wafer in muffin pan until 1/2 to 2/3 full. Cook about 15 minutes at 375 degrees. Cool and top with 1 or 2 teaspoons of cherry pie filling.
