BAKED HAM WITH SCALLOPED
POTATOES
 
6 lb. fully cooked ham
3 lb. potatoes
Salt
Boiling water
4 tbsp. butter
1 c. chopped onion
2 tbsp. flour
1/8 tsp. pepper
2 1/4 c. milk
Whole cloves
2 tbsp. brown sugar
1 tbsp. prepared mustard

Remove most of skin from ham and bake in 325 degree oven for 1 1/4 hours.

Meanwhile wash and peel potatoes. Slice about 1/4 inch thick. Place in large pan, add boiling water to cover and add 2 teaspoons salt. Cover and bring to boil. Boil about 5 minutes. Drain.

In small pan, melt butter. Add onions, saute about 3 minutes. Remove from heat. Stir in flour, 1 teaspoon salt and pepper. Stir in milk, boil, stirring. Reduce heat, simmer 3 minutes. Remove ham, increase temperature to 375 degrees. Insert cloves in fat of ham.

Combine brown sugar and mustard. Pat on ham. Place ham in center of baking dish. Put 1/2 of potatoes around ham, pour 1/2 of sauce over, repeat. Bake uncovered 45 minutes.
