ZUCCHINI BREAD 
1 c. walnuts, chopped
4 eggs
2 c. sugar
1 c. oil
3 1/2 c. flour, sifted
1 1/2 tsp. baking soda
1 tsp. salt
3/4 tsp. baking powder
1 tsp. cinnamon
2 c. chopped zucchini, uncooked
1 tsp. vanilla
1 c. raisins

Grease and flour bread tins. Combine eggs, sugar, and oil. Gradually add flour, baking soda, salt, baking powder, cinnamon and vanilla. Stir in nuts, zucchini and raisins. Pour batter into tins, filling about 3/4 full. Bake at 350 degrees for 55 to 60 minutes. Makes three loaves.
