ZUCCHINI CASSEROLE 
1 lb. Italian sausage, hot
2 zucchini, sliced
1 onion, sliced
2 squash, sliced
1 (16 oz.) jar spaghetti sauce
1 (4 oz.) pkg. sharp cheese

Cut sausage into bite size; brown and drain. Cook zucchini, onions, squash together. In 13"x9" baking dish, put layers of zucchini, sausage, onion, squash. Pour sauce over top and add cheese. Bake at 350 degrees for 30 minutes.

NOTE: Put pan under dish. Can substitute zucchini for eggplant.
