ZUCCHINI CASSEROLE 
1 lb. Italian sausage
1 lg. zucchini (or 3 small)
1 green pepper, cut up
1 med. onion, cut up
1/2 to 1 lb. sliced mushrooms
1 qt. spaghetti sauce
Salt, pepper and Italian season to taste
2 c. shredded Mozzarella cheese

Fry sausage in large skillet, remove add to skillet zucchini, pepper, onion, mushrooms and saute until tender. Season to taste with salt, pepper and Italian seasoning and 1 cup Mozzarella cheese. Add sausage. Cover with spaghetti sauce. Pour into casserole dish, cover with more shredded cheese. Bake until cheese melts at 350 degrees for about 30 minutes.
