MY FAVORITE BRAN MUFFINS 
1 1/4 c. unprocessed bran
1 c. toasted wheat germ
1 c. packed brown sugar
2 1/2 c. whole wheat flour
2 1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. grated orange peel
2 eggs, slightly beaten
1/2 c. honey
1/4 c. molasses
1/2 c. vegetable oil
2 c. buttermilk
1 c. boiling water

In large bowl, combine first 7 ingredients; set aside. Combine eggs, honey, molasses, oil, buttermilk and boiling water; mix well with dry ingredients. Spoon into greased muffin tins, filling 2/3 full. Bake at 350 degrees for 20 to 25 minutes. Batter may be made ahead and stored in refrigerator for up to 1 month to be used as needed. You may substitute Mueslix cereal for part of the bran. Yield: 2 dozen muffins.
