LEMON QUEEN PUDDING 
Butter quart baking dish.

Cube 3 slices of bread. Beat 1 whole egg and 2 egg yolks. Add 1/4 teaspoon salt; add 1/3 cup sugar, 1 teaspoon lemon extract and 2 cups milk.

Mix well and pour over bread. Let stand 10 minutes. Bake in slow oven at 275 degrees. Requires 40 minutes. Remove from oven.

TOPPING:

Beat 2 egg whites to thick foam. Beat in 1/4 cup sugar, one tablespoons at a time. Add 1/4 teaspoon lemon extract.

Cover pudding with meringue and return to oven set at 350 degrees until brown. Requires about 10 minutes. '
