CHEESY VEGGIE CASSEROLE 
2 (10 oz.) pkgs. frozen mixed vegetables
1 c. chopped celery
1/2 c. chopped onion
1 c. mayonnaise
1/2 c. shredded sharp Cheddar cheese
1/4 tsp. salt
1/8 tsp. pepper
2 c. bite-size Cheddar cheese crackers
1/4 c. melted butter
1/2 c. shredded Cheddar cheese

Cook frozen mixed vegetables according to package directions; drain well. Combine cooked vegetables, celery, onion, mayonnaise, 1/2 cup cheese, salt and pepper; spoon into greased 2 quart casserole. Combine remaining ingredients; sprinkle over top. Bake at 300 degrees for 30-40 minutes.
