LEPKUCHEN COOKIES 
1 c. honey
1 c. light molasses
1 1/2 c. brown sugar
2 tbsp. lemon juice
2 eggs
5 1/2 c. flour
1 tsp. baking soda
1 tsp. ground cardamon
2 tsp. ground annis
1 tsp. ground fennel seed
2 tsp. ginger
1 tsp. nutmeg
2 tsp. cinnamon
1 c. nuts (optional)

Mix honey and molasses and bring to a boil. Cool. Stir in brown sugar, eggs and lemon juice. Sift together flour, baking soda and spices. Mix with wet ingredients. Add nuts. Refrigerate overnight. Roll out a small amount at a time, keeping remaining dough chilled. Roll out dough to 1/4 inch thick. Cut in 1 1/2 inch squares. Place on inch apart on greased cookie sheets. Bake at 400 degrees for 10 to 12 minutes (or until no imprint remains when touched lightly). Soft and spicy, our children's favorite!
