BROCCOLI CASSEROLE 
2 boxes frozen broccoli spears, parboiled and drained
1/2 med. onion, chopped and sauteed in butter
2 cans cream of mushroom soup plus 2 cans water
1 c. Minute Rice (uncooked)
1/2 lb. Velveeta cheese, sliced
1 packet Ritz crackers, crumbled with 1 stick butter, cut up

In 9 x 13 pan place sauteed onions with butter then broccoli spears. In separate bowl, mix soup, water and rice. Pour that mixture over broccoli, slice Velveeta cheese, place on top to cover. Then sprinkle Ritz cracker and butter mixture on top.

Bake uncovered at 325 degrees for 40 minutes.
