BROCCOLI-RICE CASSEROLE 
1 med. onion, chopped fine
3 tbsp. butter
1 can cream of chicken soup
1/2 c. milk
1 lb. Velveeta cheese
3 c. cooked rice
2 pkg. frozen chopped broccoli (partly cooked and drained)

Saute onion in butter. Add soup and milk and Velveeta cheese. Heat until cheese melts. Fold in rice. Add broccoli. Mix well. Pour into greased casserole dish; cover with grated cheese. Bake at 350 degrees for 30 minutes.

Makes 2 (8 inch) square pans or 1 (13 inch) oblong pan.
