BEVO MILL'S CHEDDAR CHEESE AND
CHIVE BISCUITS
 
Approx. 7 c. all-purpose flour (2 lbs. by weight)
2 tsp. salt
4 1/2 tbsp. baking powder
2/3 c. granulated sugar
1/4 c. dried chopped chives
3/4 c. grated sharp cheddar cheese (see Note)
2/3 c. melted butter
1/2 c. vegetable oil
2 3/4 c. milk

Combine flour (not sifted), salt, baking powder, sugar and chives in a large mixing bowl; mix thoroughly. Stir in cheese; mix thoroughly. Add melted butter and oil; mix until well blended. Add milk; mix or knead until dough pulls away from sides of bowl. Do not over mix.

Drop dough onto ungreased baking pan, using a large spoon or a 1/4 cup measure. Each biscuit should weigh about 2 ounces (about 1/4 cup). Bake in a preheated 400 degree oven about 20 minutes, or until done.

Yield: about 3 dozen (2 ounce) biscuits.

NOTE: We made a second batch with 2 cups cheese and liked the biscuits better with the additional cheese.
