MEXICAN RICE 
1 c. rice
1/2 can tomato sauce
About 5 c. warm water
1 tbsp. oil
Seasonings (salt & pepper to taste)

Toast rice in hot oil until brown. Mix 1/2 medium onion and 2 cloves of garlic and saute. Immediately add water mixed with tomato sauce. Add seasonings; allow to reach rolling boil. Cover; simmer until liquid is absorbed. Do not stir while rice is simmering.
