PINEAPPLE UPSIDE DOWN CAKE 
3 tbsp. butter
1 c. brown sugar
20 oz. can crushed pineapple or sliced pineapple
1/4 to 1/3 c. whole or chopped nuts, optional
Maraschino cherries or pecans, optional
3 eggs
1 1/2 c. white sugar
1 tsp. vanilla
1/4 tsp. salt
1 1/2 c. flour
1 1/2 tsp. baking powder
1/2 c. cold water

Melt butter in 10 or 11 inch iron skillet. Add brown sugar and pineapple and simmer. Add nuts and cherries, optional. Beat eggs; add sugar and vanilla. Add salt, flour, baking powder. Beat well and add water; mix well. Bake for 50 minutes at 350 degrees. Turn out onto large plate. Serve with whipped cream. Yield 8 to 10 servings.
