PINEAPPLE UPSIDE DOWN CAKE 
1 c. white sugar
3 eggs
1/2 c. water
1 c. flour
1 1/2 tsp. baking powder
Pineapple slices to cover bottom of dish
1 c. brown sugar

Place slices of pineapple as close together as possible in bottom of dish, cover with brown sugar and then the batter. Bake in moderately slow oven 325 degrees. When still warm serve with whipped cream. Apricots or peaches may be substituted for pineapple if desired.
