PINEAPPLE UPSIDE DOWN CAKE 
1/2 c. butter
1 c. brown sugar
6-8 slices pineapple, drained
6-8 maraschino cherries, halved
1/2 c. pecans, chopped or halved
3 egg yolks
1 c. sugar
5 tbsp. pineapple juice
1 c. flour
1 tsp. baking powder
3 stiffly beaten egg whites

Melt butter in heavy 10" skillet. Add brown sugar, mix well. Lay pineapple slices in a pattern in skillet, put cherry half in pineapple center and decorate with pecans.

Beat egg yolks, add sugar and pineapple juice and mix well. Sift flour and baking powder together, stir into egg mixture. Fold in egg whites. Spoon over pineapple. Bake at 350 degrees for 45 minutes to 1 hour.
