PINEAPPLE UPSIDE DOWN CAKE 
1/2 c. melted butter
1 c. brown sugar
#2 can crushed pineapple
2 tbsp. pecans

Combine in 9 x 13 inch pan.

1 c. flour
1 tsp. baking powder
1/2 tsp. salt
3 egg yolks
1 c. sugar
5 tbsp. pineapple juice
3 egg whites

Beat egg yolks until light. Add sugar gradually. Add juice and dry ingredients. Fold in stiffly beaten egg whites. Pour batter over pineapple mixture. Bake at 350 degrees for 35-40 minutes.

Cut in squares and turn upside down on serving plate. Add ice cream or whipping cream and top with a cherry.
