CANDIED SWEET POTATOES 
Cook in boiling water to cover until nearly tender, 6 sweet potatoes. Peel and cut into 1/2 inch slices and place in shallow baking dish. Sprinkle them with 3/4 cup brown sugar, 1/2 teaspoon grated lemon rind, 1 tablespoon lemon juice or orange slice candy, cut in small pieces. Dot with butter and bake uncovered at 350 degrees for 20 minutes.
