CANDIED SWEET POTATOES 
3 lb. sweet potatoes
3 tbsp. butter
Cinnamon
1 c. brown sugar
2 tbsp. cornstarch
pinch of salt
1 c. apricot nectar

Boil sweet potatoes until tender. Drain. Allow to cool. Peel and slice. Place in a buttered casserole dish. Dot with butter and cinnamon. Mix all other ingredients together and pour over sweet potatoes.

Bake uncovered at 350°F for 20 minutes.
