ZUCCHINI BREAD 
2 c. peeled zucchini (blend well & drain)
2 c. sugar
1 c. oil
1/2 tsp. salt
1/2 tsp. ginger & ground cloves
3 eggs
1 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 c. sifted flour

Mix above. Stir in 1 cup nuts and 1 cup raisins. Bake at 325 degrees for 1 hour. Yield: 2 loaves.
