MICROWAVE SOUTHERN JAM CAKE 
1 1/2 c. all-purpose flour
2/3 c. sugar
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
2/3 c. shortening
1/2 c. fruit preserves, jam or marmalade (cherry, plum, apricot or orange)
4 eggs
1/3 c. milk
1 tbsp. lemon juice
1/2 c. finely chopped nuts
Graham cracker crumbs

Place all ingredients in mixing bowl. Blend at low speed, then beat at medium speed 2 minutes. Grease fluted cake pan well. Coat with graham cracker crumbs. Spread batter in pan. Place on turn table. Microwave at medium (50%) for 12 minutes.

If not using turn tables, rotate 1/4 turn every 3 minutes. Increase power to high (100%). Microwave 1 to 6 minutes or until done. Cool directly on countertop 10 minutes. Turn out on wire rack.

Since microwave ovens vary in power, you may need to adjust your cooking time.
