FRESH FRUIT TAPIOCA 
2 c. sliced or crushed fresh fruit
Sugar to taste
Water
5 tbsp. quick tapioca
1/4 tsp. salt
2 tbsp. lemon juice or to taste

Strawberries, sour red cherries, raspberries, peaches or any fresh fruit may be used with this recipe. When the fruit has been prepared, add the desired amount of sugar and let stand 1/2 hour. Drain off all juice, measure and add enough water to make 2 1/2 cups of liquid. Add the tapioca and salt and bring to a boil over direct heat. Remove from heat, add drained fruit and lemon juice and chill, stirring occasionally as it cools. Serve with or without cream. 5 servings.
