COCONUT PIE 
4 eggs, separated
2/3 c. sugar
3 tbsp. flour or cornstarch
2 c. milk
1 tsp. vanilla
1 c. coconut (more if desired)
1 baked pie shell

Combine first 4 ingredients in sauce pan and cook over medium heat until thick, stirring to prevent scorching. Add vanilla and coconut. Pour into baked pie shell.

MERINGUE:

4 egg whites
6 tbsp. sugar
1 tsp. vanilla

Beat egg whites until foamy, add sugar and beat until stiff; add vanilla. Spread over filling, sprinkle with coconut; bake at 350 degrees until meringue is brown.
