COCONUT PIE 
1 stick butter
1 c. sweet milk

Let come to a boil. Mix:

1 c. sugar
Pinch salt
2 heaping tsp. cornstarch
2 heaping tsp. flour
1 tsp. vanilla

Add this to the liquid in a double boiler. Add 3 egg yolks. Save whites for top. After cooked, add 1 cup coconut last. Never cook coconut.

For chocolate pie, add 2 heaping teaspoons of chocolate the same way.

MERINGUE:

3 egg whites, room temperature
6 tbsp. sugar
1/4 tsp. cream of tartar

Heat good then put 6 tablespoons sugar and beat good again. Brown at 350 degrees for 15 minutes.

BEST EVERY PASTRY:

1 c. plain flour
1/2 tsp. salt
1/3 c. Crisco
1 egg, slightly beaten
1 tsp. lemon rind
1 tbsp. lemon juice (can use vinegar)
