PORK CHOPS AND SCALLOPED
POTATOES
 
4 pork chops
2 tbsp. vegetable oil
1 lg. onion (rings)
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
1 c. milk
1/4 tsp. pepper
1 c. chicken broth
4 med. potatoes (thinly sliced)
1 tbsp. parsley

Brown chops in oil in skillet about 3 minutes each side. Remove, add onion rings to fat and saute until tender, about 3 minutes. Remove from heat, reserve.

Melt butter in saucepan. Stir in flour, salt, pepper and cook 1 minute. Add milk and broth slowly; cook stirring constantly until sauce thickens and bubbles. Remove from heat.

Arrange sliced potatoes in buttered 11x7x2 baking dish. Top with onion rings. Pour sauce over potatoes and onions. Top with chops. Cover with foil tightly. Bake at 350 degrees 1 hour covered and 10 minutes uncovered.
