ORANGE DELIGHT PIE | |
3/4 c. sugar 1/4 tsp. salt 3 beaten egg yolks 1/3 c. frozen orange juice 6 tbsp. sugar 1 1/2 c. water 1/2 c. flaked coconut 1/3 c. cornstarch 1 tbsp. butter 3 egg whites 1 (9 inch) pie shell Combine 3/4 cup sugar, cornstarch and salt in saucepan. Stir in water. Cook, stirring constantly until thick. Remove from heat. Stir small amount of mixture into beaten egg yolks. Add egg yolks to sugar, water mixture. Bring to boil and cook 1 minute, stirring constantly. Remove from heat. Add butter, orange juice and coconut. Cool. Pour in pie shell. Beat egg whites until frothy. Gradually add 6 teaspoons of sugar, heating continuously. Spread topping over filling. Bake 12 to 15 minutes at 350 degrees. |
