KAUAI CHICKEN 
1/3 c. soy sauce
3 tbsp. each granulated sugar and brown sugar
2 tbsp. hoisin sauce
1/8 tsp. garlic salt
1 broiler-fryer chicken, cut up and skinned

In small bowl combine soy, granulated and brown sugar, hoisin and garlic salt; blend well. Arrange chicken pieces in 7x11 inch baking dish with meaty portions to outside of dish. Pour soy mixture evenly over chicken. Let chicken marinate for 15 minutes.

Pour off and reserve marinade. Cover with wax paper and microwave on HIGH (100%) for 8 minutes. Turn chicken over, brush with reserved marinade. Cover and microwave on HIGH 8-9 minutes or until meat near thigh bone is no longer pink when slashed. Let stand covered for 5 minutes before serving.

Makes 4 servings. I serve it with rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
