EASY PEKING CHICKEN 
1 chicken
1 jar hoisin sauce
2 bunches spring onions
1 pkg. moo-shu shells

Place chicken in open pan. Roast chicken in 375 degree oven until it reaches 160 degrees and the skin is crisp, about 1 hour. Slice spring onions lengthwise into 2 to 3 pieces and place into ice water. Steam moo-shu shells or microwave according to package directions to soften. When chicken is done, remove in thin slices, including skin.

To serve, place chicken, onions, shells, and hoisin sauce on table. To eat, place a moo-shu shell on individual's plate. Place slices of chicken with skin in middle of shell. Add one piece of spring onion and about 1 teaspoon sauce. Fold over sides, and roll like a burrito. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
