CHEESE & POTATO MEATLOAF 
1 lb. ground beef
2 eggs
1/2 c. milk
3 slices dry bread, crumbled
1 sm. onion, chopped
Ketchup
1 tsp. salt
1/8 tsp. pepper
1 (16 oz.) can sliced potatoes, drained
4 slices any kind of cheese

In medium bowl combine beef, eggs, milk, bread, onion, salt and pepper; mix well. Spread half of mixture in greased 9 x 5 inch loaf pan. A thin coating of ketchup on the bottom is helpful. Layer with potatoes and cheese slices and then the remaining meat mixture. Top with ketchup. Bake at 350 degrees for 1 hour. Serves 4.
