CARROT CAKE 
2 1/2 c. sugar
2 c. flour
1/2 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 c. cooking oil
3 eggs
2 c. grated carrots
1 c. chopped walnuts
1 1/2 tsp. vanilla
1 sm. can crushed pineapple

Mix together all dry ingredients, add oil, eggs, vanilla and mix again. Add carrots, nuts and pineapple, mix again. Pour into greased and floured cake pans and bake in 325 degree oven. Cool and ice with favorite cream cheese frosting.

FROSTING FOR CARROT CAKE
1 box 10 X sugar
1 (8 oz.) pkg. cream cheese
1/2 stick butter
1 tsp. lemon extract

Mix all ingredients together until smooth and spread on cake.
