CARROT CAKE 
1 1/2 c. salad oil
2 c. sugar
4 eggs
1/2 tsp. salt
2 tbsp. cinnamon
3 c. grated carrots
3 c. sifted plain flour
1 tsp. baking soda
1 c. nuts

Blend oil and sugar. Add eggs, one at a time. Sift flour; add salt, soda, and cinnamon. Add to creamed mixture and then add the carrots and nuts. Mix well. Bake at 300 degrees for 30 to 40 minutes. Makes 1 three layer cake or one large cake baked in tube pan.

ICING FOR CAKE:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 box powdered sugar

Cream together. Cake tastes even better the second day.
