PINEAPPLE UPSIDE DOWN CAKE 
1/4 lb. butter
1 c. brown sugar
1 sm. can pineapple rings
1 c. sugar
5 tbsp. pineapple juice
1 c. flour
2 tsp. baking powder
3 eggs

Melt butter in a large iron skillet. Add brown sugar. Arrange pineapple slices. Separate and beat the 3 eggs. Mix sugar, pineapple juice, flour and baking powder with egg yolks to form batter. Fold batter together with the beaten egg whites. Pour over pineapple in skillet. Bake for 20 minutes at 350 degrees.
