LYNNE'S MUFFINS | |
1 1/2 c. sour milk 2 c. rolled oats 1 c. whole wheat flour 1 tsp. baking soda 1 tsp. salt 1 or 2 beaten eggs 1/4 c. brown sugar To sour milk, add 1 tablespoon vinegar in the 1 1/2 cups milk. Soak the oats in the sour milk overnight or for at least 3 hours. Toss together with a fork the flour, baking soda and salt. Combine dry ingredients, sugar and beaten eggs with the oats and milk mixture and stir lightly until the batter is mixed. Drop batter in well greased muffin tins, filling 2/3 full. Bake 20 minutes in a 400 oven. Makes 12 muffins. |
