MASHED POTATO CASSEROLE 
8 to 10 med. potatoes
Salt and pepper to taste
8 oz. pkg. cream cheese, softened
2 eggs, lightly beaten
2 tbsp. flour
2 tbsp. minced fresh parsley
2 tbsp. minced chives OR
Sm. onion, grated
1 can French fried onion rings

Whip potatoes until creamy; add cream cheese and beat again, blend in eggs, flour, parsley and onion; beat again. Put into buttered casserole; spread slightly crushed onion rings over top. Bake at 325 degrees for 30 minutes or until puffy.

May be prepared in the morning and refrigerated.
