HAM AND CHEESE ENCHILADAS 
1/2 cup (1 stick) butter
1/2 cup all-purpose flour
4 cups milk
3/4 cup shredded cheddar cheese
dash of salt and pepper
1 tsp. dry mustard
medium flour tortillas
deli sliced ham
sliced Swiss cheese

Loosely roll a few slices of ham and Swiss into tortillas and fill a 9x13-inch baking dish, then set aside.

Preheat oven to 350°F.

Melt butter and mix in flour. Slowly add milk while stirring. Add shredded cheese, salt and pepper and dry mustard. Bring to a slow boil stirring often. Pour contents over prepared enchiladas and bake at 350°F for 45 minutes.

Optional: At the 40 minutes mark of baking remove, sprinkle 1/2 cup shredded cheddar over top and place under broiler until cheese is bubbling and slightly browned.
