SPANISH OMELET | |
2 c. instant rice 1 sm. can tomato sauce 1 sm. can sliced mushrooms, sliced 1/2 c. onion, chopped 1/2 bell pepper, chopped 3 eggs, separated Sliced Swiss cheese Sliced green olives Cook rice according to package directions, drain, add tomato sauce and simmer. Sauté onions, bell pepper and mushrooms. Add to rice mixture. Beat egg whites and then egg yolks and all beaten yolks to beaten whites. Pour eggs into fry pan and cook omelet until almost done. Spread on rice mixture. Top with Swiss cheese and chopped green olives. Slice and serve with chips. |
