SEAFOOD STOVIES 
6 medium potatoes
1 medium onion
2 tbsp. (1/4 stick) butter
1 cup precooked halibut (or other fish)
1 to 2 cups water
1 tbsp. minced garlic
salt and pepper (just to flavor)
a couple leaves of fresh basil

Peel potatoes and onions, slice thinly. Arrange all ingredients in layers in a pan or skillet, make sure you put butter first so the potatoes don't stick. Put the lid on your pan or skillet so your stovies can simmer for 10-20 minutes.

Check on your potatoes by poking a fork into the center of them about every 5 minutes. When they are ready, they should be quite tender.
