1 1/2 c. thick applesauce or apricots, dried, soaked & chopped very fine 2 tbsp. unflavored gelatin 2 c. sugar 1 tsp. vanilla 1 c. finely chopped walnuts Make your own applesauce so it will be thick, or if you wish to use canned applesauce, cook it until it thickens. If using apricots, soak at least overnight; longer, if very dry. If you can, make the apricots into a consistency similar to thick applesauce, mashing them will work. Place applesauce or apricots in top of double boiler. Cook over boiling water, dissolving the unflavored gelatin. Add sugar; cook 15 minutes, stirring all the time. Add vanilla and nuts. Pour into buttered pan and cool. When set, cut into small squares and roll in granulated sugar. |
